Mussels au Currie

Serves: 2

1 pound fresh mussel scrubbed well
8 ounces coconut milk or heavy cream
1 tablespoon mild curry powder
1 teaspoon salt


1. Place the coconut milk, curry powder, and salt in a saucepan over very low heat. Stir and simmer about 2 minutes, or until the sauce is hot.
2. Bring 2 inches of water to boil in a large pot. Add the mussels, cover the pot, and cook about 1 minute, or until the shells open.
3. Using a slotted spoon, transfer the mussels to a serving bowl. Cover with the curry sauce and serve.

Important tip
When buying live fresh mussels, make sure the shells are closed. Discard those that are open. (If the shells are open a little, give them a tap, which should cause them to close. If they don’t, throw them out.) When the mussels are cooked, the shells will open—throw out any that don’t.
