Killer Quesadillas

Serves: 4

1 teaspoon butter
2 large flour tortillas
1/2 cup shredded Cheddar cheese
5 to 6 avocados slices
1 small tomato chopped
2 tablespoons grated Parmesan cheese
1 tablespoon salsa


1. Heat the bu!er in a pan over medium heat, then add a tortilla. Cover with cheddar cheese, then add the tomato and avocado. Cook for 3 to 5 minutes or until the cheese is mostly melted.
2. Place the remaining tortilla on top and gently press it into the filling. Flip with a spatula and cook another 2 minutes, or until the bottom is golden brown.
3. Transfer to a platter, sprinkle with Parmesan cheese, and place a spoonful of salsa in the center. Cut in quarters or eighths and serve.
