Cranberry Bread


Serves: 5

Yield: 9 inch loaf

Ingredients

2 cups fresh cranberries coarsely chopped
3/4 cup fresh orange juice
2 tablespoons melted butter
1 egg well beaten
2 cups all purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts

Directions:

1. Coarsely chop the cranberries.
2. Place the orange juice, butter, and egg in a large bowl and stir until well blended. Add all of the remaining ingredients and stir to form a thick batter.
3. Spoon the batter into a greased and floured 9x5 inch loaf pan. Bake in a preheated 350°F oven for 1 hour, or until a toothpick inserted in the center comes out clean.
4. Let the bread cool for 10 minutes before removing from the pan. Allow it to cool completely before serving.
