Total Calories: 223

2 1/2 cups milk
1/2 cup sugar
1/3 cup unsweetened cocoa
2 1/2 tablespoons cornstarch
1/8 teaspoon salt
1 teaspoon vanilla extract

1. Place all of the ingredients in a medium pot over medium-low heat. Stir until smooth, well blended, and uniform in color.
2. Continue stirring until the mixture comes to a boil. Stir another 30 seconds, then remove the pot from the heat.
3. Pour the mixture into a large bowl or four individual serving bowls and refrigerate 2 hours.
4. Serve the chilled pudding as is or topped with whipped cream and grated chocolate.

Important tip
Keep the heat low and stir constantly to prevent the milk from forming lumpy “curds.” The consistency of the pudding should be velvety smooth.
