Guacamole


Serves: 5

Yield: 2 Cups

Ingredients

2 ripe avocados
1 cup quartered grape tomato
1/4 cup coarsely chopped fresh cilantro
3 tablespoons freshly squeezed lemon juice
1 teaspoon sea salt

Directions:

1. Cut each avocado in half and scoop the flesh into a medium bowl. Set the shells aside.

2. Place all of the remaining ingredients in the bowl and combine with a fork until just mixed, but still chunky.

3. Serve immediately, or transfer to a container and refrigerate until ready to use.

Corn Chips your favorite vegetable, or Mexican Slaw.

For a Change . . .
* Use the avocado shells as bowls. Scoop the guacamole into the avocado shells and serve.

Tip . . .
Because avocados are particularly sensitive to browning when exposed to oxygen, it is best to prepare the guacamole right before serving.
