Super Breakfast Porridge


Serves: 4

Ingredients

1/2 cup quinoa, rinsed
1/2 cup amaranth
2 1/2 cups boiling water
pinch sea salt or nori flakes

Directions:

1. Place all the ingredients in a 2-quart saucepan. Cover and bring to a boil over medium-high heat. Reduce the heat to low and simmer 20 minutes, or until the water is absorbed and the grains are tender.

2. Serve hot, either as is or topped with your favorite milk, yogurt, or maple syrup.

For a Change . . .
• Add 1/2 cup shredded coconut, toasted nuts, or seeds to the mixture before boiling.
