Crisp Cababge Salad with Watercress and Caraway Seeds

Ingredients

7 1/2 cups thinly sliced green cabbage
2 1/2 cups thinly sliced red cabbage
1 1/2 cups coarsely chopped watercress
1 cup thinly sliced red radish
1 cup coarsely chopped scallion
2 tablespoons caraway seeds
2 tablespoons sea salt

Directions:

1. Place all the ingredients in a vegetable press or large mixing bowl and stir well. If using a press, tighten it; if using a bowl, place a large plate on top of the ingredients and weigh it down with a large rock, a gallon jar filled with beans or some other weight.

2. Press the ingredients for at least 30 minutes and as long as 1 1/4 hours. Toss before serving.
