Bell Pepper Relish

1/2 medium red bell pepper finely diced
1/2 medium yellow bell pepper finely diced
1/2 medium green bell pepper finely diced
1/2 medium cucumber seeded and finely diced
1/4 cup finely chopped red onion
1/4 cup apple cider vinegar
2 tablespoons malt, rice, or maple syrup
1/4 teaspoon sea salt
1/2 teaspoon dry mustard
1/2 teaspoon ground celery seed
1/2 teaspoon cinnamon
1/8 teaspoon allspice


1. Place all the ingredients in a large bowl and mix well.
2. Refrigerate and chill at least 1 hour before serving. Store in a covered container in the refrigerator for up to a week.
