Orange Baked Beans

Ingredients

2 cups black-eyed peas
1/4 pound bacon, diced
1 cup orange juice
1/2 cup ketchup
2 tablespoons molasses
2 tablespoons sherry or vinegar
2 teaspoons salt
1/2 teaspoon dry mustard
1/4 teaspoon ginger

Directions:

Soak beans overnight in liquid to cover drain. Brown bacon in heated cooker drain. Add soaked beans and remaining ingredients. Add water to cover beans, making sure cooker is no more than 1/2 full. Lock lid and bring to full pressure. Adjust heat to maintain pressure and cook for 45 minutes. Naturally release pressure.
