Herbed Butters

Ingredients

CHIPOTLE BUTTER
1/2 cup butter softened
2 teaspoons grated lime rinds
4 teaspoons lime juice
4 teaspoons minced chipotle in adobe sauce
kosher salt to taste
ITALIAN BUTTER
1 cup butter softened
1/2 teaspoon fresh chopped basil
1/2 teaspoon oregano
1/2 teaspoon minced garlic
salt to taste
RASBPERRY BUTTER
1/2 cup butter softened
1/3 cup fresh or frozen raspberries
2 tablespoons confectioners' sugar
dash lemon juice
ORANGE BUTTER
1 cup butter softened
1/2 cup orange marmalade

Directions:

CHIPOTLE BUTTER
In a small bowl, mix softened butter and 2 teaspoons chipotle peppers (with seeds removed). Mix well. Add lime zest, lime juice, and the remaining 2 teaspoons chipotle in adobe sauce. Add salt to taste. Roll into a log, wrap in plastic, and refrigerate until firm. When ready to give, cut into disks and package in an attractive container.

ITALIAN BUTTER
In a small bowl, mix all ingredients until thoroughly blended. Roll into a log, wrap in plastic, and refrigerate until firm. When ready to give, cut into disks and package in an attractive container.

RASPBERRY BUTTER
In a small bowl, combine all ingredients. Raspberries will become juicy, so press butter mixture through a cheesecloth or fine-mesh sieve to remove as much juice as possible. Transfer to an attractive gift container and refrigerate. Give as soon as possible.

ORANGE BUTTER
In a small bowl, mix both ingredients well. Transfer to an attractive container and refrigerate.

TIP: An excellent source for small, attractive, and affordable glass dishes is your local thrift store. Place butter-filled dish on a large square of clear cellophane, pull up corners, tie with a pretty ribbon, and you have an easy and low-cost gift of friendship.
