Apple and Avocado Salad with Fresh Citrus Dressing

1 (10-ounce) package salad greens
1/4 cup chopped red onion
1/2 cup chopped walnuts
1/2 cup crumbled blue cheese
1 teaspoon fresh lemon zest
1 apple peeled, cored, and thinly sliced
1 avocado peeled, pitted, and diced
1 orange juiced
1/2 lemon juiced
1 teaspoon fresh lemon zest
1 clove garlic minced
2 tablespoons extra virgin olive oil
2 tablespoons honey
salt and pepper to taste


In a large bowl, toss together the baby greens, red onion, walnuts, blue cheese, and lemon zest. Just before serving, mix in the apple and avocado and drizzle with fresh citrus dressing.

In a leak-proof container, combine the orange juice, lemon juice, lemon zest, garlic, olive oil, honey, and salt and pepper. Seal container and shake until ingredients are combined well.
