Solar Turkey Loaf

Ingredients

1 tablespoon olive oil
1 small onion, chopped
1 carrot, shredded
1 stalk celery, chopped
1 clove garlic, minced
1 pound ground turkey
1 egg, lightly beaten
2/3 cup dry bread crumbs
1/3 cup dry white wine
4 leaves fresh sage, chopped
1 teaspoon fresh thyme leaves
salt, pepper

Directions:

Set Global Sun Oven out to preheat.

Sauté onion, carrot, celery and garlic in olive oil until soft, about 5 minutes. Allow vegetable mixture to cool and combine with remaining ingredients in a large bowl. Form into a loaf and place in a light-weight, dark roasting pan with a lid. Cover and bake in Sun Oven until internal temperature reaches 180¼F. Let rest 10 minutes before slicing.
