Garden Patch Relish

Ingredients

4 1/2 cups cucumbers, chopped
3 1/2 cups celery, chopped
3 cups onions, chopped
2 cups red peppers, chopped
1/4 cup canning salt
4 cups water
4 cups cider vinegar
3 cups sugar
2 teaspoons mustard seed
2 teaspoons celery seed
10 (1/2-pint) canning jars and lids, sterilized

Directions:

Combine cucumbers, celery, onions and peppers in a large bowl; add salt and water. Cover and refrigerate overnight. Drain; rinse and drain again. Combine remaining ingredients in a large kettle; bring to a boil. Add vegetables; simmer for 10 minutes. Ladle hot mixture into hot sterilized jars, leaving 1/4-inch headspace. Wipe rims; secure with lids and rings. Process for 10 minutes in a boiling water bath; set on towels to cool. Check for seals.

Tip: Filled with jars of relish, pickles, barbecue sauce, mustard and catsup, a condiment basket is a great gift for anyone who loves summertime grilling. Tuck in a set of tongs, an apron and favorite grilling cookbook…so thoughtful!
