East African Peanut Soup

Ingredients

1 cup raw unsalted peanut
1/2 teaspoon cardamom seeds
1 teaspoon black mustard seeds
1 teaspoon cumin seeds
1 tablespoon sesame seeds
3 tablespoons poppy seeds
1 tablespoon grated ginger root
1 to 2 teaspoon crushed hot pepper flakes
1 teaspoon salt
4 cups fresh or frozen corn
5 cups water
1/2 cup couscous

Directions:

Grind the peanuts and seeds in a blender. In a soup pot, stir the blended peanuts and seeds over medium heat until they smell roasted.

Add the gingerroot, hot pepper flakes, salt, corn, and water to the soup pot. Bring to a boil, reduce the heat, and simmer for 10 minutes.

Add the couscous and continue to simmer for 10 more minutes. Turn off the heat and enjoy. Serve with Dabo Kola.
