Warm Chocolate Bliss

Ingredients

2/3 cup bittersweet chocolate chips
1/4 cup Kentucky bourbon whiskey
2/3 cup sugar
1/2 cup unsalted butter, melted
3 eggs, well beaten, room temperature

Directions:

Preheat oven to 350°. Generously butter a small 6-inch soufflé dish or 2 ramekins; set aside. Put the tea kettle or a pan of water on to warm. Put chocolate chips in a mixing bowl. Mix bourbon and sugar together in a small, heavy-bottomed saucepan. Bring to a boil over medium heat; stir to dissolve sugar. Remove from heat, and pour over chocolate chips (if you use mini-chips, they will melt faster). Stir until chocolate is melted and mixture is completely blended.

Add melted butter; blend in. Add eggs, and whisk briskly to incorporate fully. Pour into buttered small soufflé dish or 2 ramekins. Cover with foil, and put in larger, oven-proof pan. Pour hot water into pan, filling about 3/4 of the way up the dish or ramekins. Bake 30 minutes for the single dish, 20–25 for 2 smaller dishes.

Remove from water bath, remove foil, and allow to cool 5 minutes. Invert onto serving plate, and top with ice cream; dust with cinnamon or cocoa powder to serve.
