Banana Nut Cake

Ingredients

1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 very ripe bananas, sliced
2 1/4 cups unbleached white flour
1 1/4 teaspoons baking soda
1 teaspoon salt
1/2 cup buttermilk
3/4 cup coarsely chopped walnuts

Cream Cheese Frosting:
3 ounces cream cheese, softened
2 tablespoons butter or margarine
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
1 tablespoon milk, as needed
1/4 cup finely chopped toasted walnuts

Directions:

Preheat oven to 350°. In a large mixing bowl, cream together butter and sugar. Beat in eggs and vanilla, mixing well. Add bananas, and beat again. On low speed, beat in flour, baking soda, and salt. Add buttermilk, and mix well; stir in walnuts.

Pour into a greased and floured 9x13-inch baking pan. Bake 30–35 minutes or until toothpick inserted in center of cake comes out clean. Remove from oven, and place on a wire rack to cool. Prepare Cream Cheese Frosting. When cool, frost cake.

For Cream Cheese Frosting:
In a medium bowl, mix together cream cheese, butter, and vanilla. Gradually beat in sugar until mixture is smooth and spreads easily. Add milk to thin, if necessary. Sprinkle with toasted walnuts.


Sizes seem to change often. Cream cheese is hard to find in 3-ounce packages, so we are saying simply “3 ounces.” You will need to cut 3/8 off the 8-ounce bar, which is a little less than half.
