Swiss Scalloped Potatoes

Ingredients

5 to 6 medium red potatoes, peeled and thinly sliced
1/2 cup green onion, sliced
1 1/4 cups whipping cream or half and half
1 teaspoon salt
2 tablespoons butter or margarine
1 cup grated Swiss cheese

Directions:

Preheat oven to 350 degrees. Lay potatoes in a greased 8 x 8-inch pan. Sprinkle green onion over potatoes. Mix cream and salt together, then pour over potatoes. Place small pieces of butter evenly over top. Cover with aluminum foil. Bake 55–65 minutes, or until potatoes are tender. Sprinkle cheese over top. Return pan to oven 2–4 minutes, or until cheese melts. Makes 6 servings.
