Stuffed Seasoned Meat Loaf Roll

Ingredients

1 pound ground beef
1/2 cup quick oats
1 egg, beaten
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup dried minced onion
1/3 cup bread crumbs
2 cups mashed potatoes, seasoned with garlic salt*
1 cup grated Monterey Jack cheese or cheddar cheese
1 cup ketchup

Directions:

Preheat oven to 350 degrees.

Combine beef, oats, egg, milk, salt, pepper, and onion in a large bowl and set aside.

Spread bread crumbs over long piece of waxed paper. Lay beef mixture over bread crumbs about 1/2 inch thick in the shape of a rectangle. Spread potatoes over top, leaving about 1/2 inch around the edges. Sprinkle cheese over potatoes. Use waxed paper to roll meat in jelly-roll fashion, with potatoes in the middle. Pinch the ends closed and place meat roll in a lightly greased bread pan. Pour ketchup over top. Bake 50–60 minutes, or until meat is done in the middle. Makes 6 servings.
