Pea Soup

Ingredients

Stock:
1 ham bone (shank)
1 large onion
2 medium carrots
1 bay leaf
1/2 tablespoon crushed, black peppercorn

Other Ingredients:
1 package split peas (green or yellow)
1 onion, diced
1 - 2 carrot, diced
1/2 - 1 cup diced ham, from ham bone
freshly ground black pepper to taste

Directions:

Stock:
Remove the rest of the usable ham from the bone and reserve. Cut onion into quarters. Chop carrots in large pieces. Put bone, onion, and carrot into stockpot and cover with cold water. Add bay leaf and peppercorns; simmer for 3 hours. Strain Stock. Return strained Stock to soup pot; bring to boil.

Other Ingredients:
Add peas, onion, carrots, and ham to stock. Simmer 1 1/2 hours, or until peas are cooked. Serve with a good bread and freshly ground black pepper.
