Crazy Raisin Muffins

Ingredients

DRY INGREDIENTS
1 cup whole wheat pastry flour
1 cup whole wheat flour
1/2 cup unbleached flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
2 teaspoons ground cloves
2 teaspoons ground cinnamon
WET INGREDIENTS
1 1/4 cups milk
1/4 cup margarine or butter melted
1 large egg
GOODIES
2 cups raisins
2 teaspoons grated orange peel
1/4 cup honey
1 cup boiling water

Directions:

1. Place the raisins, orange peel, and honey in a medium bowl, and cover with the boiling water. Set aside to cool. The raisins will absorb the liquid and become plump.

2. Preheat the oven to 400°F.

3. Sift the dry ingredients together in a large bowl.

4. Whisk the wet ingredients in a medium bowl or blend in a food processor. Pour the wet ingredients into the raisin mixture and stir to combine. Add to the dry ingredients, and stir just until mixed. Do not overstir.

5. Spoon the batter into a greased or papered muffin tin. Fill each cup nearly to the top.

6. Bake for 15 to 20 minutes.

7. Cool the muffins at least 10 minutes before removing from the tin.
