Meatballs In Beer Sauce

Ingredients

2 eggs beaten
2 cups finely ground pork rind
3 tablespoons green bell peppers, chopped
1 teaspoon salt
Freshly ground pepper to taste
2/3 cup heavy cream
3 tablespoons onions grated
3/4 teaspoon poultry seasoning or 1/4 teaspoon each dried thyme, sage, and basil, crushed
1 pound ground beef
1 to 2 tablespoon vegetable oil
Beer Sauce:
3/4 can beer
2 teaspoons splenda
1/2 cup ketchup
1 tablespoon Worcestershire sauce
1/4 teaspoon hot pepper sauce or to taste
1 tablespoon cider vinegar

Directions:

1. Combine eggs, pork rinds, green pepper, salt, pepper, heavy cream, onion, seasoning, and ground beef. Form into small bite-size balls. Over medium heat, brown meatballs in vegetable oil. Prepare the following Beer Sauce.

Beer Sauce:
1. In a large saucepan, mix all ingredients and bring to a boil. Add browned meatballs to sauce and simmer for 30 minutes, stirring occasionally. Best if served the next day.
