Ingredients

2 (14 1/2-ounce) cans chicken broth
1 cup water
2 (14 1/2-ounce) cans diced tomatoes
3/4 cup instant whole grain brown rice dry
1 (15 1/2-ounce) can kidney beans rinsed and drained
1 (10-ounce) package frozen mixed vegetables
1/2 teaspoon dried oregano
1/4 teaspoon pepper
3 dashes Tabasco Hot Sauce
1/2 cup grated Parmesan cheese (1 T per serving)

Directions:

1. In a large saucepan, bring broth, water, and tomatoes to boil over medium-high heat.
2. Stir in remaining ingredients(minus cheese). Return to boil. Reduce heat to low, cover and simmer 5 minutes. Remove from heat and let stand 3 minutes while you set the table.
3. Sprinkle servings with cheese if desired.
4. Serve with popcorn or whole-wheat crackers, and fruit or frozen yogurt for dessert.
