Crepes

Ingredients

1 1/2 cups flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups milk
2 tablespoons melted butter
1/2 teaspoon mexican vanilla extract
2 eggs
1 apple peeled, cored, and chopped

Directions:

Mix first 4 ingredients in a bowl. Stir in next 4 ingredients. Beat with hand beater until smooth. Fold in apples. Lightly butter 8-inch skillet. For each crepe, pour 1/4 cup of the batter into skillet. Immediately rotate skillet until thin film covers bottom. Cook until light brown, flip and cook on the other side.
