Bread Pudding

4 cups (heaping) dried bread cubes
1/3 cup cranberry raisins (craisens)
4 eggs
2 cups heavy cream
2 cups half and half
1 1/2 cups sugar
2 teaspoons mexican vanilla extract
1 teaspoon cinnamon
1/4 cup butter, melted
1 cup brown sugar
caramel ice cream topping sauce
whipped cream


Spray 9 x 13-inch pan with nonstick cooking spray. Spread bread cubes evenly in bottom of the pan and sprinkle with craisens and set aside. In a mixing bowl mix together eggs, cream, half-and-half, sugar, vanilla, and cinnamon together and pour over bread. Push bread mixture down into pan to make sure bread crumbs and craisens all covered (add more cream if necessary). Drizzle melted butter over the top. Sprinkle brown sugar evenly over the top and bake at 350°F for 35 minutes. Drizzle with caramel sauce and top with whipped cream.
