Green Bean and Sausage Soup

Ingredients

2 tablespoons olive oil
1 medium onion, chopped
1 red bell pepper, or yellow bell pepper, chopped
3 Italian-style pork sausages
2 large tomatoes, peeled, seeded, and chopped, or 1 cup canned tomatoes, chopped
8 ounces green beans, trimmed and cut into bite-size pieces
pinch of crushed red pepper
salt
3 cups water
1/4 cup medium-grain rice, such as Arborio

Directions:

1 Pour the oil into a medium pot. Add the onion, pepper, and sausages and cook, stirring occasionally, until the vegetables are tender and the sausages are lightly browned, about 10 minutes.

2 Add the tomatoes, green beans, crushed red pepper, and salt to taste. Add 3 cups cool water and bring to a simmer. Lower the heat and cook 15 minutes.

3 Transfer the sausages to a plate. Thinly slice the sausages and return them to the pot.

4 Stir in the rice and cook until the rice is tender, 15 to 20 minutes more. Serve hot.
