Herb Roasted Pork


Serves: 6

Ingredients

3 1/2 pounds pork roast
2 cloves garlic finely chopped
1 sprig fresh rosemary chopped
2 tablespoons olive oil
salt and pepper to taste
4 (approx.) potatoes peeled and cut into large pieces

Directions:

Preheat oven to 350. Mix together garlic, rosemary, salt and pepper. Rub mixture onto and around meat. Sprinkle with olive oil. Bake for 30 minutes then add potatoes. Bake for another 45 minutes, basting frequently. Let roast stand for 5 -10 minutes, then cut and serve.
