Farfalle with Salmon


Serves: 4

Ingredients

2 tablespoons olive oil
3 tablespoons butter
4 green onions chopped into small pieces
3 cloves minced garlic
1/2 cup white wine (can substitute with white grape juice)
2 tablespoons capers
1 1/2 pounds salmon fillets
1 pound farfalle or other pasta
1/3 cup (about) salt for water
salt and pepper to taste

Directions:

In a large saucepan or casserole, sauté onions and garlic in oil and butter just until onions begin to color. Add wine and capers and bring to a simmer. Add the salmon fillets, cover and simmer for about 10 minutes (5 minutes if only half an inch thick). Meanwhile, cook pasta in 4 quarts of salted water. When salmon is done, remove from heat and flake salmon fillets apart with two forks. Drain pasta well and add to salmon pan. Toss well and season with salt and pepper.
