Fire-Roasted Tomato Gravy

Ingredients

2 (28-ounce) cans fire-roasted whole tomatoes
1 (28-ounce) can fire-roasted crushed tomato
1 cup V8 vegetable juice
1 dried mushrooms, chopped
salt and ground black pepper to taste
ground black pepper, to taste
2 tablespoons extra-virgin olive oil

Directions:

Crush the whole tomatoes and add to a large slow cooker. Add the crushed tomatoes, V8, dried mushrooms, salt, and pepper. Cover and cook on low for 8 hours. Add the olive oil and use as a pasta sauce, or for cooking meats, poultry, or seafood.
