Baked Flounder with Shrimp Sauce

Ingredients

8 flounder filets (bass, trout, or pompano may be substituted)

SHRIMP SAUCE:
1 cup butter or margarine
3 tablespoons flour
1 3/4 cups milk
4 tablespoons chopped green peppers
1 tablespoon chopped pimiento
1/2 cup chopped onion
1 teaspoon Worcestershire sauce
1 dash red pepper
3/4 teaspoon salt
1/2 garlic clove, minced
2 beaten egg yolk
3/4 cup heavy cream
1 1/2 cups chopped mushrooms
2 1/2 pounds chopped, cooked shrimp

Directions:

Place each fillet on a piece of aluminum foil and spread each with Shrimp Sauce. Bake at 350° for 45 minutes. Serve directly from foil.

Shrimp Sauce:
Using double boiler, make a thick sauce by melting butter and adding flour and then milk. Then add green pepper, pimiento, onion, Worcestershire sauce, red pepper, salt, and minced garlic. Mix egg yolks and cream. Add to sauce. Then stir in mushrooms and shrimp.
