Cheesy Meatball Soup


Serves: 5

Ingredients

2 1/2 cups water
2 cubes beef bouillon
1 (15-ounce) can corn, with liquid
1 medium potato, peeled and cubed
1/2 cup sliced carrot
1/2 cup chopped onion
40 frozen fully cooked meatballs, thawed*
1 (16-ounce) jar processed cheese sauce

Directions:

In a 4-quart pot, combine water, bouillon, corn, potato, carrots, and onion. Bring to a boil. Add meatballs. Bring to a boil again. Reduce heat. Cover and simmer for 20 minutes, or until potatoes are tender. Stir in the cheese sauce. Cook over low heat until heated through.

*Can be found in the frozen meat section.
