STEP 11. Once the dough has risen, it’s time to “punch it down.” That’s right, it’s time to take your floured fist, and bury it in that swollen ball of dough, which is now filled with gas bubbles. Punching it is like puncturing a balloon—the gas escapes and the dough deflates. After it flattens, fold the dough over a few times and press it down with the palms of your hands to force out any remaining gas.
