Multigrain Bread

Ingredients

1 tablespoon (1 packet) active dry yeast
1 1/4 cups lukewarm water
2 tablespoons vegetable oil
2 tablespoons honey
1 tablespoon salt
3/4 cup uncooked ground multi-grain cereal
2 cups white unbleached flour
1 1/4 to 1 1/2 cups whole wheat flour
1 cup cooked unground cereal, cooled
flakes of the unground cereal to sprinkle on loaf
1-2 tablespoon cornmeal for baking sheet

Directions:

1. Place the yeast, water, oil, honey, salt, and uncooked ground cereal in a dishpan or large bowl and stir with a wooden spoon. Add the white flour and 1 cup of whole wheat flour, and continue to stir with the spoon. Continue adding flour a bit at a time until you can’t stir any more.

2. Add the cooled cooked cereal and begin to knead directly in the bowl (or on a floured board), adding more flour as necessary (the cereal will make the dough quite sticky). Knead for about 10 minutes, or until the dough is easy to handle and elastic. Shape into a ball.

3. Spread a little oil on the bottom and sides of the bowl. Add the ball of dough, then turn it over, oiled side up. Cover and set in a warm spot for about an hour, or until the dough doubles in size. Lightly sprinkle a large baking sheet with cornmeal and set aside.

4. Punch down the risen dough, knead for a minute, then let it rest for a few minutes. Shape into a round loaf and place on the prepared baking sheet. Cover and let rise about 30 minutes, or until doubled in bulk.

5. Brush or spray the loaf with cold water and sprinkle the top with unground cereal flakes. Place in a preheated 400ºF oven. Spray the oven walls with some cold water to create steam. Bake for 40 to 50 minutes, spraying the loaves and oven walls with cold water every 10 minutes. The bread is ready when it is browned and hollow-sounding when rapped on the bottom with your knuckle. Cool on a wire rack before serving.
