Orange Bran Muffins

Ingredients

1 (11-ounce) can mandarin orange segment drained
1 1/2 cups whole bran cereal
1/2 cup water boiling
1/3 cup milk
1/4 cup frozen orange juice concentrate,frozen orange
1 egg
3 tablespoons vegetable oil
1 cup flour
3 tablespoons sugar
1 teaspoon baking soda

Directions:

Preheat oven to 400°. Place paper liners in twelve muffin-pan cups or grease the cups.

Reserve twelve mandarin orange segments for garnish drain on paper towels. Cut up remaining segments and place in a strainer set both aside.

In a large bowl, mix together cereal and boiling water. Stir in milk, orange juice concentrate, egg and oil until thoroughly blended set aside.

In a medium bowl, stir together flour, sugar and baking soda. Add to cereal mixture and stir just until moistened. Gently stir in cut-up orange pieces just until blended. Fill muffin cups two-thirds full. Top each muffin with a reserved mandarin orange segment.

Bake for 18 to 20 minutes or until a wooden pick inserted in center comes out clean. Remove muffins from pan and cool on wire racks if not serving warm.

Wrap cooled muffins in foil and store in a cool place. If desired, reheat wrapped muffins in a preheated 400° oven for 8 to 10 minutes before serving.
