Winter Squash with Garlic and Miso


Serves: 4

Ingredients

1 3/4 pounds winter squash such as butternut, hubbard, turban, delicata, or red kuri
1 teaspoon white or yellow miso or to taste
1 clove garlic pressed or to taste

Directions:

1. Wash the squash and, with a knife, pierce it in a few places. Place the squash on a baking sheet and bake in a preheated 350°F oven for about 45 minutes, or until tender. When it is done, a knife or fork can be easily inserted into the flesh. Set aside to cool.

2. When the squash is cool enough to handle, cut it in half and scoop out the seeds and stringy parts. Scrape the flesh from the skin and place in a bowl. Discard the skin. Add the miso and mash the squash. Add the garlic and mix well. Serve warm.
