Stephen's Garlic-Herb Baked Chicken

4 pounds chicken
cloves from 1 garlic bulb peeled
fresh oregano or rosemary to taste


1. Rinse the chicken and pat dry. Stuff the cavity with the garlic and as much rosemary or oregano as you can fit.

2. Place the chicken in a roasting pan and tent with a piece of aluminum foil. Bake in a preheated 300°F oven for about 4 hours, or until the juices run clear. Serve with brown basmati rice, sautéed vegetables, and a green salad.
