Chicken Provencal (40 Clove Chicken)

Ingredients

4 pounds chicken cut into pieces
sea salt and pepper to taste
3 tablespoons olive oil
40 cloves garlic unpeeled, with a thin slice of them cut off the bottom end of each clove
1 lemon seeded and cut into paper thin slices
4 stalks celery chopped
3/4 cup dry white wine
2 tablespoons herbs de Provence
1/4 cup minced Italian parsley

Directions:

1. Sprinkle the chicken pieces with salt and pepper, and rub into the skin.

2. Heat the oil in a large skillet and cook the chicken pieces until lightly browned on all sides.

3. Place the garlic cloves in a single layer in the bottom of a 9-x-13-inch baking dish, then arrange the chicken pieces, skin side up, on top of the garlic. Layer the lemon slices over the chicken, then sprinkle the celery on top of the lemon and pour on the wine. Sprinkle with herbs de Provence and parsley. Cover and bake in a preheated 375°F oven for 1 1/2 hours or until the chichen is tender and completely cooked.

4. Serve with French country-style bread, a steamed veggie, and an enormous salad.
