Broccoflower Fritti

Ingredients

CLUB SODA BATTER:
1 cup all-purpose flour
5 large eggs, beaten
2 tablespoons club soda
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper

vegetable shortening or vegetable oil for deep-frying
1 head broccoflower or cauliflower (1 3/4 pounds), cut into bite-sized pieces
1/2 cup , freshly grated Parmigiano-Reggiano cheese

Directions:

1. TO MAKE THE BATTER: In a medium bowl, stir the flour, eggs, club soda, salt, and pepper together just until combined. Do not overmix.

2. Preheat the oven to 200°F. Place a large wire cake rack over a jelly roll pan. In a deep Dutch oven, melt vegetable shortening over high heat to a depth of 2 to 3 inches and heat it to 365°F. In batches, without crowding, dip the broccoflower pieces in the batter and deep-fry until golden brown, about 2 minutes. Using a wire-mesh strainer, transfer to the wire rack and keep warm in the oven while frying the rest. Place the broccoflower on a serving platter, sprinkle with the cheese, and serve immediately.
