Brush a 12-inch, nonstick frying pan with olive oil and heat on medium 1 minute. Lay 1 tortilla in pan and place cheese slices cut to fit on top. Scatter roasted peppers on cheese; cover with other tortilla. Cook 1–2 minutes until golden underneath, then carefully flip it and cook another 1–2 minutes, until crisp and golden on second side. Slide onto cutting board, and slice into 12 wedges. Serve with salsa.
