Heat grill. Place tortillas on baking pans; brush with oil; sprinkle with 1 cup cheese over all. Top with divided pepperoni, olives, and tomato, and remaining cheese.
With broad spatula, slide pizzas onto grill over medium heat. Cook covered 3–6 minutes till cheese is melted and crust is crisp. Slide pizzas back onto baking sheets to cut and serve.
Editor's Extra: These can be baked in 425° oven about 7–9 minutes till edges are crispy.
