Mix oil and seasoning mix in a small bowl. Cut each pita round into 8 wedges. Brush rough side of each wedge with oil mixture. Place on baking pan; lightly sprinkle with cheese of choice. Bake at 350° for 15 minutes or until crisp. Remove from oven; transfer to wire racks to cool.
