Spread half the cheese in a greased 8-inch square baking dish. Drain chiles, reserving liquid. Sprinkle green chiles over cheese; add remaining cheese. Beat eggs with reserved liquid; pour over cheese; sprinkle with paprika. Bake in preheated 350° oven for 35–40 minutes. Cut in small squares. Serve with toothpicks. Okay to freeze and reheat.
Fun Fact: Be creative with cheeses, as so many recipes call for Cheddar. In just one supermarket, we found the following selection of shredded cheeses: Mild Cheddar, Sharp Cheddar, Colby-Jack, Nacho & Taco, Taco, Fancy Swiss, Fancy Mozzarella, Pizza Double Cheese, Mozzarella & Provolone, Cheddar Jack, Monterey Jack, 4-Cheese Italian, and 4-Cheese Mexican. And as soon as somebody can think of another combination, there'll be more.
