Apple Pie Cake

Ingredients

1/4 cup butter, softened
1 cup sugar
1 teaspoon baking soda
2 tablespoons hot water
1 egg
1 cup all-purpose flour
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
1/2 cup chopped nuts
2 cups diced apples

Directions:

Cream together butter and sugar. Dissolve baking soda in hot water and add to creamed mixture. Stir in all other ingredients. Pour into greased 9-inch pie pan. Bake at 350° for 35–40 minutes. Serve warm with ice cream or sweetened whipped cream.

Variation: For an easy/lazy brunch, double recipe and bake in a 9x13-inch pan; cut into squares for easy serving. Serve with slices of Cheddar cheese and tiny sausage links. Fresh yogurt or whipped cream cheese is good with it, too.
