Banana Bread

Ingredients

1 1/2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1/3 cup vegetable oil
2 eggs
1 cup banana mashed ripe (about 2 large bananas)
3/4 teaspoon lemon peel grated (optional)
1/2 cup nuts chopped

Directions:

Preheat oven to 325°. Generously grease a 9 x 5 x 3-inch loaf pan.

In a medium bowl, mix flour, baking soda and salt set aside.

In a large mixer bowl at medium speed, beat sugar, oil and eggs until well blended. Beat in bananas and lemon rind. At low speed, beat in flour mixture just until blended. By hand, stir in nuts. Spoon into loaf pan.

Bake for 50 to 60 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 10 minutes. Remove from pan and cool on wire rack. Wrap in foil. Serve at room temperature.

High Altitude Adjustments: At 6,000 feet, no adjustments needed.
