Willie's Green Chili


Serves: 6

Ingredients

1 1/2 pounds pork shoulder or pork roast, cubed
1 tablespoon flour
2 tablespoons oils
1 onion, diced
2 cloves garlic, diced
1 (7-ounce) can diced green chili
2 (10-ounce) cans Rotel tomatoes with chilies
salt and pepper

Directions:

Dredge pork cubes in flour and brown in skillet in small amount of cooking oil along with onion and garlic. Drain any fat and put in a crock pot or Dutch oven. Add chiles and tomatoes and seasonings. Simmer for 4 to 6 hours. If you like a richer flavor, add chicken broth. If too spicy, add water. This also can be made with beef or chicken. Serves 6.
