Spinach And Cheese Squares

Ingredients

1/2 cup egg substitute or 2 eggs
6 tablespoons whole wheat flour
1 (10-ounce) package frozen chopped spinach, thawed and well drained
2 cups 1% low-fat cottage cheese
2 cups low-fat Cheddar cheese, grated
1/2 teaspoon freshly ground pepper
1/8 teaspoon cayenne pepper or to taste
pinch nutmeg (optional)
3 tablespoons wheat germ

Directions:

1. In a large bowl beat the egg substitute with the flour until the mixture is smooth

2. Add the spinach, cheeses, and cayenne and nutmeg, and mix the ingredients well. Pour mixture into a vegetable cooking spray-coated 13 x 9 x 2-inch baking pan.

3. Sprinkle the top with wheat germ and bake at 350 degrees for about 45 minutes.

4. Let stand for about 10 minutes and then cut into 1 1/2-inch squares for serving.
