Mushroom-Asparagus Casserole

Ingredients

1/2 pound mushrooms, sliced
2 tablespoons reduced-calorie margarine
4 tablespoons flour
2 cups milk fat free
1/4 teaspoon minced onion
1 (15-ounce) can asparagus spears or 2 (10-oz) packages, frozen thawed asparagus or equivalent in another vegetable, drained and cut into bite-size pieces
1 cup seasoned stuffing mix

Directions:

1. Sauté mushrooms briefly in melted margarine. Remove from skillet.

2. Add flour to skillet and blend thoroughly

3. Add milk gradually and cook, stirring constantly, until mixture thickens. Add seasoning and vegetables.

4. Pour into casserole coated with nonstick vegetable cooking spray.

5. Top with stuffing mix. Bake until bubbly at 350°F for about 20 minutes.
