Crustless Zucchini Tofu Quiche*

Ingredients

4 cups zucchini, fresh or frozen, shredded
1 cup onion, chopped
1 1/2 cloves garlic, minced
3/4 cup egg substitute
1 tablespoon sherry or lemon juice
3/4 teaspoon basil
1/4 teaspoon thyme
3/4 teaspoon oregano
1/4 teaspoon ginger
1 cup (4 oz.) low-fat Cheddar cheese, shredded
1/4 cup Parmesan cheese
1/2 cup tofu, crumbled
2 cups Italian bread crumbs

Directions:

1. In a deep 9-inch pie plate or shallow casserole, microwave zucchini, onions, and garlic 7 minutes on HIGH, stirring twice.

2. Beat egg substitute add wine and seasonings. Add to vegetables.

3. Stir in cheese and tofu. Sprinkle crumbs on top.

4. Microwave 10 minutes on HIGH or until nearly set in center.
