Zucchini Milk

Directions:

* When you have an overabundance of zucchini and are completely out of ideas, try this. The milk can be substituted for the liquid in bread, biscuits, meat loaf, and some desserts (see Zucchini-Lemon Pie and Zucchini Bread Pudding). It also freezes well fill containers 2/3 full to allow for expansion. Pare zucchini remove seeds if large. Cut into chunks about 1-inch square. Fill blender or food processor 1/4 full. Blend until liquid is thick and white.

Two small zucchini or 10 ounces, pared, equals approximately 1 cup zucchini milk.
