Drain the pineapple, reserving four tablespoons of juice. Heat 2 tablespoons of the juice over medium heat in a skillet. Add the raisins, green onions, ginger and garlic cook and stir for 3 minutes or until onions are tender. Stir in the pineapple tidbits, rice, chicken, and the remaining pineapple juice. Cover turn the heat to low and cook for 5 minutes or until heated through. If desired, garnish the dish with cherry tomatoes and additional green onions. Serves 4.
