Tropical Chicken Salad

Ingredients

3/4 cup mayonnaise
2 teaspoons mustard prepared
2 teaspoons ginger ground
2 teaspoons sugar
1 teaspoon lemon juice
1/4 teaspoon salt
2 cups chicken diced cooked
1 (11-ounce) can mandarin orange segment drained
1 (8-ounce) can pineapple tidbit in juice, drained
1 cup celery thinly sliced
1 cup chow mein noodles
4 lettuce cups (optional)

Directions:

In a small bowl, mix mayonnaise, mustard, ginger, sugar, lemon juice and salt until smooth set aside.

In a medium bowl, mix chicken, oranges, pineapple and celery. Add dressing and stir until evenly coated. Cover and refrigerate for 1 to 24 hours.

Just before serving, stir in noodles. Spoon into lettuce cups on individual plates if desired.
